    Trevor’s trip to North Euston, Fleetwood

    On Thursday the 12th of December, the marketing team had the pleasure of visiting Joel Guy and his junior sous chef Leon Gomm at Joels at The Bay, located in the historic North Euston Hotel, Fleetwood. Known for its high-quality, premium menu, the restaurant offers a top-notch dining experience that blends fresh, local ingredients with culinary expertise. We attended to capture some behind the scenes content and do an in-depth interview with the head chef, Joel Guy, about his passion for cooking, his journey in the industry and his thoughts on the current position of the hospitality sector.

    Joels Early Life

    When Joel was a teenager, his career began when he started working front of house in a local Italian restaurant, Pulcinella’s in Cleveleys. At the time, Joel had a strong interest in the famous renowned chef, Jamie Oliver, which sparked his growing interest in cooking. While working at Pulcinella’s, Joel started staying behind after his shift asking more questions about the kitchen and the dishes being prepared. Once the chefs saw how dedicated Joel was to build a career in catering, they started giving him more responsibility. After the commis chefs left and a job opening became available, Joel moved to the back of house and started working in the kitchen. He spent a year there, gaining essential hands-on experience and really kicking off his career before heading to university in Leeds.

    Joels Career

    After completing his degree in Film, Joel stuck on the catering pathway and started working in Leeds alongside another chef who had cooked all over the world in various places, including a Michelin star restaurant in London. This chef, having built an impressive career, began working in a bar to relax after a hectic life. It was in that bar that Joel met him, an encounter Joel describes as “winning the lottery.” The two worked closely together for four years, during which Joel learned crucial skills and techniques that helped shape him into the chef he is today. 

    Once returning home to Blackpool, Joel took a leap and opened his own restaurant above the Glasshouse in Cleveleys, formerly known as “Joels Restaurant”. The restaurant operated for over 7 years and became well known in the area with a regular client base for its delicious food (particularly the Sunday dinners), inviting atmosphere and welcoming, friendly service. 

    Challenges in this hospitality industry

    Despite successfully navigating the challenges of COVID by adapting with takeaway options and reopening when things started to return to normal, the restaurant continued to face mounting pressures. The impact of inflation and the cost-of-living crisis squeezed margins to the point where the business was no longer sustainable. Unfortunately, this resulted in Joel making the decision to close early 2024. The restaurants closure led Joel to his current role as head chef at North Euston, where he has replicated his old menu and offered the famous Sunday dinners, which has boosted the client base at the hotel. Joel is enjoying his new role, having the freedom to really excel in his love for cooking without the added pressures of running the business during such unpredictable times.

    This led onto a conversation with Joel about challenges in the hospitality sector. We discussed how the current economic climate has put immense pressure on hospitality, and restaurants are finding it increasingly difficult to maintain profitability while balancing rising costs for ingredients, energy, and staff.

    Joel shared how working alongside his sous chef, Leon, and a talented team of specialists in their own areas has really allowed him to focus on creating irresistible dishes and providing exceptional service to both hotel guests and local residents. Trevor’s had the chance to sample some of the food, including a perfectly cooked fillet steak drenched in butter, tender pork belly, and a rich, creamy wild mushroom ciabatta. We were absolutely blown away by the quality and flavours of everything we tasted. It was so good, in fact, that we’re already planning to book a table and experience it all again for ourselves!

    Speaking with Joel, it was clear that his passion for cooking is at the heart of what makes his dishes so delicious. He emphasised that great food starts long before anything hits the pan, it’s all about caring for the produce from the very beginning. Joel brings this mindset into every part of his cooking, whether it’s with the meat, purees, or gravies. That attention to detail and love for the journey really shone through.

    Joel shared that working with Trevor’s has been fantastic. He spoke about the great prices, which allows North Euston to stock a wide range of products. He also mentioned how Trevor’s always goes “above and beyond” if something’s missing from another supplier, they’ll drop it off the same day. Joel praised the friendly, approachable staff and said it’s always a pleasure to chat with them. He also commended the team for visiting that day, expressing his enjoyment to get to know the team on a more personal level.

    Behind the scenes of care catering at Primrose Bank

    On Wednesday, November 20th, the Marketing team at Trevor’s had the pleasure of visiting one of our valued clients, Primrose Bank, a residential care home located in Poulton Le Fylde. The purpose of the visit was to capture stunning photos and videos to highlight the exceptional food at Primrose Bank, and to interview the head chef, Aaron Watson.

    Aaron is highly regarded for his expertise in care catering, having won the Care Home Chef of the Year award in 2021 after competing in the prestigious NACC competition. With over five years of experience at Primrose Bank, Aaron joined the team in 2019 and has since become an integral part of their culinary offering.

    Aarons Early Career

    Aaron’s passion for cooking began at a young age when he first started working in hospitality front-of-house. He later pursued formal training at a catering college, which set the foundation for his career as a chef. Throughout his career, Aaron has honed a wide range of skills, adapting them to meet the specific needs of the care catering sector. His dedication to catering for residents with specialized dietary needs, including those with dysphagia, has earned him recognition for his outstanding work in the field.

    Aaron gave us an insightful look into a typical day in his role as head chef at Primrose Bank, walking us through the carefully planned meals he prepares for the residents.

    Restaurant quality meals in care catering: a day at Primrose Bank

    For breakfast, the residents enjoy a continental spread, complete with fresh fruits to ensure they’re getting the essential nutrients to start their day. Lunchtime is the main meal, where residents are served restaurant-style. The care catering assistants take individual orders, and Aaron and his team offer a choice of two homemade dishes. From sauces to desserts, everything is made from scratch, including the ice cream!

    For the evening meal, residents can choose from sandwiches or lighter hot dishes. Throughout service, Aaron and his sous chef Nathan, ensure that they cater to varying dietary needs and preferences, making adjustments to accommodate each resident’s specific requirements so that everyone is satisfied with their meal.

    On the day Trevor’s team visited, we had the opportunity to observe the lunch service and capture some great content showcasing the delicious meals being served. It was truly impressive to see the care and attention Aaron and Nathan put into preparing meals at Primrose Bank, and how they skillfully adapted dishes to meet the varying dietary needs of each resident. Watching them cater to such a wide range of requirements was a real eye-opener. This led to a conversation with Aaron about the common misconceptions surrounding care catering. Many people still hold the belief that “care food isn’t great,” but after seeing the lunch service at Primrose, we can confidently say that it is truly great! We even had the chance to taste the food ourselves, and in our opinion, it was restaurant-quality.

    Further discussions with the Primrose team revealed how they occasionally elevate the dining experience for residents by offering a “fine dining” experience. This includes a special three-course meal, with dimmed lighting, music, and family guests, creating a lovely atmosphere that mimics going out for dinner—a treat many of the residents haven’t enjoyed in years. The passion Aaron and Nathan have for ensuring the residents not only eat well but also enjoy a high quality of life was truly inspiring to hear. Their dedication to making every meal an enjoyable experience really stood out.

    Finally, we had the chance to chat with Aaron about his experience working with Trevor’s Foodservice. Having been a care catering customer for three years, Aaron shared how the flexibility of our service has been invaluable to him and his team. The ability to access a wide range of products—which are always in stock—along with the fast, reliable delivery, has been a huge benefit. As a small team, they don’t have the luxury of running out to the shops for last-minute ingredients, so this level of convenience is crucial.

    This festive season, Trevor’s Foodservice want to share Christmas recipes that you can create for your guests using our Country Range products! These recipes are straightforward to make, and they’re sure to impress with both their beautiful presentation and delicious flavour! Dive into your creative flair and make your guests something extra special this Christmas by checking out the recipes below. 

    Sausage Roll Canapes

    Cooking Time - 55 Minutes  

    Portions -8 

    Elevate your menu with these delicious homemade sausage rolls. Combining all the festive flavours, these will definitely be a favorite this season! 


    Ingredients 

    • 500g Country Range puff pastry 

    • 75g Country Range stuffing 

    • Roll out the puff pastry to 40cm x 20cm 

    • Mix the sausage meat, cranberry, shredded turkey, stuffing, salt and pepper 

    • Place lengthways into the middle of the puff pastry in a sausage shape and press the pigs in blankets into the centre of the mix 

    • Lightly brush the inside edges of the pastry with your beaten egg 

    • Fold over the pastry to form the classic sausage roll shape and crimp the edges tight 

    • Carefully lift onto a parchment lined baking try 

    • Brush over with the egg wash and bake in the oven for 20/25 minutes until it is golden 

    • Remove from the oven and let rest for 10 minutes.  After resting, serve and enjoy!

    Recipe 

    1. Preheat the oven to 180c fan/200c oven 

    2. Make up the sage and onion stuffing as per pack instructions 

    3. Roll out the puff pastry to 40cm x 20cm 

    4. Mix the sausage meat, cranberry, shredded turkey, stuffing, salt and pepper 

    5. Place lengthways into the middle of the puff pastry in a sausage shape and press the pigs in blankets into the centre

    6. Lightly brush the inside edges of the pastry with your beaten egg 

    7. Fold over the pastry to form the classic sausage roll shape and crimp the edges tight 

    8. Carefully lift onto a parchment lined baking try 

    9. Brush over with the egg wash and bake in the oven for 20/25 minutes until it is golden 

    10. Remove from the oven and let rest for 10 minutesAfter resting, serve and enjoy! 


    Chocolate Ice Cream Espresso Martini 

    Cooking Time - 5 Minutes  

    Portions - 2 

    This chocolate Ice cream espresso martini is the perfect drink to offer on your menu this season. Tasty, cooling and rich, your guests will love it! 

    Ingredients

    • 4 small scoops Signature by Country Range Chocolate Dairy Ice Cream 

    • 50ml Country Range Maple Syrup 

    • 100ml vodka 

    • 50ml Kahula coffee liqueur 

    • 50ml espresso 

    • 1 handful of ice 

    Recipe

    1. Half fill a cocktail shaker with ice and add the vodka, coffee liquor, maple syrup and espresso. Place the lid on top and shake vigorously for 30 seconds 

    2. Place 2 small scoops of chocolate ice cream into each martini glass and pour the contents from your cocktail shaker over the martini 

    3. Garnish with a little grated chocolate or a drizzle of chocolate sauce 


    Speculaas Cookie Cups 

    These cookie cups are the perfect festive desserts for care homes, hotels and cafes. Create them today! 

    Cooking Time -52 Minutes  

    Portions -8 

    Ingredients

    • 8 Country Range Speculaas Spiced Cookie Pucks 

    • 160g Biscoff spread 

    • 50g Milk chocolate 

    • 100ml double cream 

    • 25g butter 

    • 1 pinch of salt to garnish 

    Recipe

    1. Pre heat the oven to 170c fan/190c oven 

    2. Place 8 Speculaas cookies on a tray to defrost

    3. Brush some soft butter into 8 indentations of a muffin tray

    4. Gently press each cookie into the greased muffin tray to form 8 pastry/cookie cups

    5. Bake in the oven for 6/7 mins and then allow to cool for 2 mins 

    6. They will have puffed up so whilst soft, press back into shape being careful not to break the sides 

    7. Once cool, fill with a spoonful of Biscoff spread 

    8. To make the chocolate ganache- heat the cream to a simmer then pour over the milk chocolate and leave it for 5 minutes. Do not stir 

    9. Gently fold the cream and chocolate and mix until thick and glossy

    10. Top each cookie cup with chocolate and sprinkle a little bit of salt over the top 

    11. Allow to cool and serve

    Trevors Foodservice Announces Strategic Site Transition for Enhanced Services!

    We hope this message finds you well. At Trevors Foodservice, we greatly appreciate your continued support, and we want to keep you informed about some upcoming changes that will briefly affect our operations.

    The dates for the site transition are now set for April 5th to 8th, 2024. This decision has been carefully considered to minimise disruptions to our operations and services.

    • Closure Period: Trevors Foodservice will be temporarily closed during the mentioned dates to facilitate the movement of goods to our new site in Fleetwood.
    • Order Placement Deadline: To ensure a seamless experience, please place orders for delivery on April 4th by Wednesday, April 3rd (by 4 pm) if you are within the Fylde Coast, and by Tuesday, April 2nd (by 4 pm) if you are outside of the Fylde Coast.
    • Delivery on April 9th: Orders for delivery on April 9th must be placed by Thursday, April 4th (before 4 pm). For other delivery days, drops will resume on your next available delivery day.

    We want to reassure you that our business will resume normal operations on Tuesday, April 9th. There will be no disruptions in our services, and everything will continue as usual.
